This culinary arrangement served as an opportunity to showcase India's diverse food culture to world leaders on a significant platform of international diplomacy.
India's Regional Culinary Diversity
The menu for the first day included several well-known traditional Indian dishes. Highlights included Paneer Lababdar, Rajma Rasila, Dal Panchmel, Sabz Motiya Pulao, Makai Lehsunia Palak, and Dum Aloo Banarasi.
This selection—featuring paneer, lentils (dal), pulao, and various vegetables—highlighted the rich diversity of Indian vegetarian cuisine.
International Flavors Included
Alongside traditional Indian fare, the menu also featured dishes with international flavors to cater to the foreign guests.
The spread included *Penne al Pomodoro e Panna*, Baked Vegetable Gratin, and a special salad featuring pearl millet, haricot beans, and roasted bell peppers with a citrus-parsley dressing.
Salads and Papad Accompaniments
Various salads and *papads* accompanied the main courses. The vegetarian theme was maintained throughout the entire menu.
The organizers aimed to introduce the foreign delegates to the regional diversity and heritage of Indian cuisine.
Indian Food Culture on the Diplomatic Stage
Hosting such a meal at an international event like the BRICS summit is viewed as an opportunity to showcase India's cultural diversity. By combining popular local dishes with international cuisine, the hosts created a varied dining experience for the guests.
In particular, dishes such as paneer, dal, pulao, rajma, dum aloo, and spinach preparations underscored the country's long-standing tradition of vegetarian cooking.
